Tofu scramble

Serves two

What you need:

  • 1 teaspoon olive oil
  • ½ onion, chopped
  • ½ green pepper, chopped
  • 2 scallions, chopped
  • 16 ounces firm tofu, crumbled
  • Soy sauce
  • Turmeric
  • Black pepper

What you do:

Heat oil. Add onion, green pepper and scallions; sauté for two minutes. Add tofu; sauté for two minutes. Add soy sauce, turmeric and pepper to taste; cook for one minute.
