What you need:

  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 red pepper, finely chopped
  • 1 cup cooked black beans
  • 1 cup cooked white rice
  • Fresh cilantro
  • Black pepper

What you do:

Heat oil. Add onion, garlic and red pepper; sauté for five minutes. And black beans and rice; simmer. Add cilantro and black pepper just before removing pan from heat.
