Breakfast burrito

Serves two.

What you need:

  • 1 teaspoon olive oil
  • ½ red pepper, diced
  • ¼ yellow onion, diced
  • 2 eggs plus 2 whites, beaten together
  • Ground black pepper
  • 2 whole-wheat tortillas

What you do:

  • Add oil to pan over medium-high heat.
  • Add vegetables and cook for three minutes.
  • Add eggs. Scramble until done.
  • Add pepper to taste.
  • Microwave tortillas for 30 seconds.
  • Wrap the eggs in the tortillas.

What you get:

254 calories, 1.9 g saturated fat, 212 mg cholesterol, 518 mg sodium, 4.8 g fiber
